This is our cousin Barb’s recipe and it is always at all of our big family gatherings. Everyone in the family loves this dish and it is a must have at all of our holiday tables. In the past this recipe has been primarily made with a can of cream of mushroom soup, but in my quest to make everything from scratch and avoid all the junk that goes into processed foods, I decided to make the soup part from scratch. Barb and I hashed out this recipe and we both tried it this last weekend and it turned out perfectly and was absolutely delicious. This recipe is perfect for any holiday and the added bonus is the kids love it too!
1 16 ounce bag of frozen Broccoli
¼ cup Butter
2 tablespoons flour
¼ cup Onion, finely chopped
2-3 fresh Mushrooms, finely chopped
1 clove of Garlic, minced
1 ½ cups of Chicken Stock
½ cup of Milk or Cream
Salt and Pepper to taste
¼ cup Parmesan Cheese, grated
1 ½ cups Cheddar Cheese, grated
1 cups French Fried Onions
Sauté the onions, garlic and mushrooms in the butter until soft. Whisk in flour until completely incorporated then slowly whisk in chicken stock, whisking constantly. Then Whisk in milk and add salt and pepper to taste. Cook this until thick and bubbly.
Place the frozen broccoli in a casserole dish and toss with the parmesan cheese and ½ cup cheddar cheese. Pour the mushroom sauce over the broccoli and lightly toss to coat. Top the dish with the remaining cheddar cheese and French fried onions. Bake uncovered in a 350 degree oven for 40-50 minutes.
